Mango Salsa Salmon
I like any recipe at all involving salmon. I like bagels and lox, grilled salmon, salmon sushi… If you don’t like salmon, there’s always fried fish-and-chips, which is also delicious!
My favorite salmon recipe is lime-marinade salmon with chunky melon salsa. I think I originally found the recipe in Good Housekeeping or Redbook or something like that, but I’ve changed it quite a bit. This is a nice recipe because you can do all the prep ahead of time and then throw it together at the last minute.
For the salsa:
honeydew melon
1 mango
red grapefruit (the kind in a jar is better than fresh)
1 small red onion
mint
lime juice
Chop up the melon, mango and onion, and break up the grapefruit into bits. They don’t have to be too small, but try to chop the mint very finely. Put everything in a sealed Tupperware in the fridge.
For the marinade:
scallions
soy sauce
citrus juice
Then make the marinade. Mix soy sauce, finely chopped scallions, and either lime or grapefruit juice (or both!), enough to cover the salmon steaks. Let the marinating fish sit in fridge overnight.
The next day, pan-fry the salmon and cook some plain rice.
Pour the salsa over the salmon, and serve with rice.
